“The Morning He Arrives”
Coffee Cake
Guaranteed so good you might just tip over an umbrella stand in your haste to get another piece.
INGREDIENTS
2 cups blanched almond flour
1 cup Bob’s Red Mill 1-to-1 Gluten Free All Purpose Flour
⅓ cup date sugar
1 tsp cinnamon
1½ tsp baking soda
1 tsp baking powder
½ tsp salt
½ cup cold butter
3 eggs
½ cup maple syrup
½ cup milk or buttermilk
1 tsp vanilla
Preheat oven to 350 degrees. Grease a 9×13-inch glass baking pan.
Combine all dry ingredients in a large mixing bowl. Cut in the cold butter.
In a small mixing bowl, whisk together eggs, maple syrup, milk, and vanilla.
Fold the wet mixture into the dry mixture. Don’t overmix. Pour into prepared pan.
Don’t put it in the oven yet. The best part is next.
STREUSEL TOPPING:
⅓ cup almond flour
⅓ cup gluten-free all-purpose flour
¼ cup date sugar
1 tsp cinnamon
¼ cup cold butter
Mix flours, date sugar, and cinnamon in a small bowl. Cut in the cold butter until the mixture forms little pea-sized crumbles. Sprinkle evenly over the batter.
Bake for 15–17 minutes. Check with a toothpick and bake a little longer if needed, until the center is just baked through.
Serve to two young people who are clearly still in love but don’t have any idea what to do about it.
